Banana chocolate chip muffins

Toddler, pregnancy and postpartum-freezer friendly! No sugar added and chocolate chips are optional.

Makes 12 muffins


Ingredients:

1 cup all-purpose flour
1/2 cup oats
1/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1/2 teaspoons baking soda
1/2 teaspoon salt
1 tablespoon chia seeds
1/3 cup vegetable or coconut oil
1/4 cup milk of choice
1 egg
1 teaspoon vanilla extract
3 mashed medium ripe bananas
chocolate chips of choice (optional)

Preheat oven to 175 C

Mix all dry ingredients together (flour, oats, cocoa powder, baking powder, salt and chia seeds).

Mix all wet ingredients together with a blender and add the wet ingredients to the dry and blend well (it might seem really dense but it becomes smoother).

Add your chocolate chips (if using them) and fold in.

Oil your muffin tin and scoop 1 tablespoon of batter into each.

Bake for 12-15 minutes or until a toothpick comes out clean.
